Ingredients
- 2 large eggs
- 1/3 to 1/2 cup chopped mushrooms
- Quarter Moon Farm Black Garlic cloves (10 to 15, or to taste)
- 2 Tablespoons Parmesan cheese
Directions
- Heat frying pan with a little oil or butter.
- Peel black garlic cloves and chop about half of them.
- Saute chopped black garlic with chopped mushrooms.
- When mushrooms have softened, remove from pan and save to side.
- Whisk eggs together in a small bowl; pour into same pan over medium heat.
- When eggs no longer look runny, place chopped mushroom mixture over half of them.
- Gently fold other half of eggs over the mushroom mixture, and cook for another minute or so.
- Carefully remove omelette from pan.
- Sprinkle Parmesan and remaining black garlic cloves over top.
