Looking to mix it up a little for breakfast? Try serving a fried egg over sauteed vegetables on top of a warmed tortilla. Give it all extra zest by adding Quarter Moon Farm’s Black Garlic & Sea Salt.
Here’s how we did it:
Sauté chopped garlic and a little chopped onion in a frying pan in a scant amount of olive oil or butter. Add sliced mushrooms and a chopped tomato, and sauté for several minutes until everything is well blended. Stir in Black Garlic & Sea Salt to taste.
Set aside sautéed vegetables, and toast a tortilla in the same pan, warming on each side. Place tortilla on a plate, top with vegetables. Then fry an egg over medium. Place egg on top of tortilla and vegetables, and top all with some shredded cheese of your choice and a little more Black Garlic & Sea Salt.
Any leftovers in the refrigerator? We had a few grilled eggplant slices with black garlic, which made the perfect accompaniment to this delectable breakfast treat!
