Lentils are easy to cook and are a good source of protein, vitamins, minerals, and fiber. You may have had the traditional ‘Sloppy Joe’ with ground beef, but this version is just as delicious — and the black garlic adds an extra special depth to the flavors found in this vegan recipe.
Ingredients
- 1 cup red lentils, rinsed
- 3 Tablespoons olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 small green pepper, chopped
- 15-ounce tomato sauce
- 6 cloves Quarter Moon Farm Black Garlic, chopped
- 2 Tablespoons Worcestershire sauce
- 2 teaspoons cumin
- 1 teaspoon chili powder
- ½ teaspoon smoked paprika
- Salt & pepper, to taste
- Red onion, sliced (optional, for topping)
Directions
- Bring 2 cups water to a boil in a small saucepan; add rinsed lentils, cover, and simmer for 7 minutes (then remove from heat).
- Meanwhile, heat olive oil in large frying pan; sauté onion, garlic, and green pepper until onions are translucent.
- Add tomato sauce, black garlic cloves, Worcestershire sauce, cumin, chili powder, and smoked paprika; mix well.
- Add cooked lentils to the frying pan, mix well, and simmer for 5 minutes.
- Season with salt and pepper, if you choose.
- Serve on a hamburger bun, and top with a slice of red onion (optional).
This recipe serves 4. Corn on the cob, coleslaw, and fries are excellent accompaniments.
