Ingredients
- 1 pound spaghetti
- 1 head organic black garlic
- 4 cups fresh basil
- 1/3 cup parsley
- 1/3 cup pine nuts
- 1 Tablespoon Tahini
- 1/3 cup olive oil
- salt & pepper, optional

Directions
- Peel all black garlic bulbs.
- Wash and de-stem basil.
- Wash and de-stem parsley.
- Put black garlic, basil, parsley, pine nuts, and Tahini in food processor and pulse until blended.
- Gradually add olive oil, pulsing until blended.
- Add salt & pepper to taste.
- Boil pasta; drain when al dente.
- Spoon pesto sauce over pasta and mix well.
Another option is to spiralize a zucchini and add that to the pasta pot in the last minute of cooking. In that case, you can reduce the amount of pasta, or make a little more pesto to make sure there is enough to cover all the pasta and noodles. Don’t be afraid to experiment!
