Tofu is an excellent source of protein and takes on the flavors of what it is coated with or marinated in. Tempeh could be substituted in this recipe; if so, cut tempeh into 1-inch cubes.
Preheat oven to 350 degrees.
Ingredients
- 1 lb. tofu
- 2 heads Quarter Moon Farm Black Garlic
- 1/4 cup olive oil
- 1/4 cup tamari
- 1 Tablespoon Balsamic vinegar
- 1 Tablespoon lemon juice
- 1 teaspoon minced (raw white) garlic
- 1/2 teaspoon basil
- 1/2 teaspoon oregano
- 1/2 teaspoon powdered ginger
- 1/4 teaspoon thyme
- 1/4 teaspoon pepper
Directions
- Slice tofu into thin strips and place in single layer on bottom of baking dish.
- Peel and chop black garlic cloves into small pieces,.
- Combine remaining ingredients in a small bowl, and mix well.
- Add black garlic to the bowl and stir.
- Pour mixture over tofu.
- Bake for 30 minutes, checking at halfway point and turning tofu strips to make sure they are all well coated.
Serve with roasted potatoes and other vegetables, or over rice.
